Fire Suppression System

It has recently been suggested in the catering press that, rather than have extract systems professionally cleaned to eliminate fire hazardous grease deposits, restaurateurs should instead fit a fire suppression system.  By avoiding the removal of grease accumulations, systems will remain a fire hazard and under the terms of the Fire Safety Order the owner or manager of the premises will remain in breach of the law regardless of how effective he hopes a suppression system might be in the event of a fire.  By all means have a suppression system fitted, but only after the extract has been cleaned and the system made safe.  Then in order to continue to comply with the law grease accumulations will need to be removed regularly.

As the fire statistics continue to show, there are far too many catering premises where, as a result of grease not being removed from extract ducting, fires which have started in the kitchen have spread with destructive force throughout the building as the flammable grease has ignited.  There is no alternative to having the extract system cleaned.  It remains the only way to eliminate risk to building occupants and to comply with the law.
